Ackee and Saltfish Recipe:
Ingredients:
- 1 lb salted cod (salt fish)
- 6 tbsp extra virgin olive oil
- 1 medium onion
- Hot pepper to taste
- 4 cloves garlic, sliced
- 1 large tomato
- 1 red bell pepper
- 1 green bell pepper
- 1 yellow bell pepper
- 4 scallions, chopped
- 4 sprigs of thyme, chopped (or leaves removed)
- Black pepper to taste
- Salt to taste
- 1 can ackee, drained and rinsed
Instructions:
- Start by boiling the salted cod to remove excess salt. Rinse the cod, then boil in water for 10 minutes. Drain, refill the pot with fresh water, and boil for another 15 minutes. Once boiled, rinse, cool, and break into large chunks.
- In a wide sauté pan, heat olive oil over medium heat. Add onion, hot pepper, and garlic, cooking for 2 minutes until fragrant.
- Add thyme, tomato, bell peppers, and half of the chopped scallions. Cook for another 2 minutes, stirring occasionally.
- Stir in the flaked saltfish, mixing well with the vegetables. Season with black pepper.
- Gently add the drained ackee to the center of the pan, then fold in the saltfish mixture, being careful not to break the ackee apart. Sprinkle with more black pepper and remaining chopped scallions.
- Serve with Fried Dumplings below or with some Roast & Fry Breadfruit to twist it up a bit.
