Ingredients:

  • 4 strips of bacon, chopped

  • 4 cups water
  • 1 teaspoon thyme
  • 1/2 Scotch bonnet pepper (optional)
  • Salt and black pepper to taste

Instructions:

  1. Cook the bacon: In a large pan, fry the bacon until crispy. Remove the bacon pieces and set them aside. Leave about 1 tablespoon of the bacon fat in the pan.
  2. Sauté aromatics: Add chopped onions, garlic, and thyme to the pan and sauté in the bacon fat until softened.
  3. Prepare cornmeal: Mix the coconut milk and water in a pot, and bring to a simmer. Slowly whisk in the cornmeal to prevent lumps from forming.
  4. Add bacon and seasonings: Stir in the cooked bacon, Scotch bonnet pepper (if using), and season with salt and black pepper. Lower the heat and let it simmer, stirring frequently to prevent sticking, for about 25-30 minutes, or until the cornmeal is fully cooked and creamy.
  5. Serve: Serve hot, and garnish with additional bacon if desired.
