Classic Jamaican Rock Bun

Celebrate Children’s Day with the rugged yet delightful Jamaican Rock Bun. These little cakes are crunchy on the outside and soft and sweet on the inside. They’re a true Jamaican classic and are perfect for baking with the kids.

Ingredients:

  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1 cup shredded coconut
  • 1 tsp baking powder
  • ½ tsp ground nutmeg
  • ½ tsp ground cinnamon
  • ¼ tsp salt
  • 1 tsp vanilla extract
  • 1 egg
  • ½ cup unsalted butter, melted
  • ¼ cup milk

Instructions:

  1. Preheat oven to 350°F (175°C).
  2. In a bowl, mix flour, sugar, coconut, baking powder, nutmeg, cinnamon, and salt.
  3. In another bowl, beat egg, add melted butter, milk, and vanilla extract.
  4. Combine wet and dry ingredients until just mixed.
  5. Drop spoonfuls of the mixture onto a greased baking sheet.
  6. Bake for 20-25 minutes or until golden brown.
  7. Cool on a wire rack.
